Vegetable fried rice recipe – A popular Indo-Chinese recipe made using simple spices, perfect for a lunch box.
Vegetable Rice is a common dish in my home, which I make once a week since my hubby likes it very much. But always make raitha for that. Very rarely I make cauliflower Manchurian for this. Though we all like the Manchurian, since it is deep fried we avoid making this often. After a long time, I made both vegetable rice and cauliflower Manchurian. Here is the recipe for Baby Corn Manchurian  .
If you have leftover rice then it is very easy to make this veg fried rice. I have used basmati rice in this recipe, you can use short-grained rice too. The traditional Chinese fried rice includes lots of sauces but I don’t prefer the strong taste of those sauces. If you are a person living in India and think this is a Chinese recipe, definitely it is not. Though in India we say Chinese cuisine, there is a way more difference in the taste. The Indo-Chinese dishes we get in India and the Chinese dishes we get here in Singapore, and Hong Kong are different. They don’t have a dish named Manchurian in their cuisine.

Method:
- Soak rice in 1 and 1/4 cup of water for 15 min and pressure cook it. Check out my post on How to cook basmati rice .
- Allow it to cool.  Make the ginger, garlic, and chili into a coarse paste. Chop the bottom part of the spring onion finely and keep it aside. Don’t discard the green part.
- In a pan, add 1 tbsp of oil add sugar and add this paste. Saute for some time. Now add the white part of the onion which we chopped. Saute for 2 to 3 mins. Now add the mixed veggies except capsicum. Saute in high flame. Add salt,( if using) tomato sauce, and soya sauce. Saute for 2 mins. Add the chopped capsicum.
- Cook for a minute. 
- Switch off the flame mix it with rice and add pepper powder also and mix gently to have an even coat.
- Garnish with the chopped green portion of the spring onion.

Note:
- You can add finely chopped baby corn to the veggies.
- Always ensure that the veggies should be crunchy and not overcooked.
- Vegetable fried rice pairs well with Manchurian

Ingredients
- 1 cup Basmati rice
- ¼ cup Veggies I used capsicum, carrot, sweetcorn and peas
- 4 cloves Garlic
- a smal piece Ginger
- 2 Green chili
- 1 tsp Soya sauce
- ½ tsp Tomato sauce optional
- ½ tsp Sugar
- ½ tsp Pepper powder
- 1 tbsp Olive oil
- Spring onion few to garnish
Instructions
