Tomato rice recipe – Easy lunch box recipe with step-by-step pictures – Thakkali sadam recipe

Simple tomato rice recipe, I personally love this recipe. Amma packs this for the school lunch box and whenever we travel on buses and trains. All my friends in school/college are great fans of my mom’s thakkali sadam. This pairs well with a simple potato curry.

  • Cook the rice and spread it on a plate to make it cool.

  • Do not overcook the rice or mash it.

  • In a pan, add oil and throw in the mustard seeds and curry leaves.

  • When it splutters add chopped onions and saute for a minute.

  • Then add the chopped tomato and add the sambar powder, turmeric powder, salt, and garam masala to this.

  • Saute nicely in a medium flame till the raw smell goes.
  • Switch off the flame and add the rice to this and mix well.
  • Garnish with coriander leaves.

Note:

  1. Sambar powder can be replaced with red chili powder and coriander powder.
  2. Ginger garlic paste can be added in the beginning before adding onions.
  3. I used parboiled rice, and sona masoori rice or basmati rice can be used.

Tomato rice recipe

Ingredients

  • 1 cup cooked rice
  • 1 onion
  • 1 tomato
  • 1 tsp sambar powder
  • 1/2 tsp turmeric powder
  • 3 tsp oil
  • ½ tsp ghee optional
  • ½ tsp mustard seeds
  • Few curry leaves
  • ½ tsp garam masala
