Thai cucumber and pineapple salad – Refreshing Thai pineapple and cucumber salad recipe with a short video and step-by-step pictures.
Recently I got a Thai vegetarian cookbook from a friend and I saw many interesting Thai recipes in that book I noted down a few interesting recipes which I will post one by one. This Pineapple and cucumber salad which I tried 2 days back turned out totally awesome. I can say it is a perfect and refreshing salad and a must-try salad at home for this summer.

- Cube the pineapple and cucumber. ( I used the Japanese cucumber)
- If using the Indian cucumber, scoop out the seeds if you can peel off the skin too.
- In a wide bowl, add the pineapple, cucumber, soya sauce, and red chili flakes.
- Add a little salt.
- Crush the roasted peanuts in a mixer coarsely and add to the salad.

- Mix well.
- Serve immediately. If serving later, add the peanuts before serving.

Notes:
- Add chili flakes as per your taste.
- You can add finely chopped green chili instead of chili flakes.
- Thai pineapple cucumber salad is a perfect crowd-pleaser.

Thai pineapple cucumber salad
Ingredients
- 1 cup pineapple cubed
- 1 cup cucumber cubed
- 3 tbsp roasted peanuts crushed
- ½ tsp chili flakes
- ½ tsp soya sauce
- Salt to taste
Instructions
