Basmati rice 1/2 cup Olive oil 1 tblsp + 1 tsp Garlic 1 tblsp (finely chopped) Spring onion whites 3 tblsp ( can replace with normal onion too) Fresh Red chili or green chili 1 Sugar 1/2 tsp Capsicum 2 tblsp Sweet corn 1/3 cup Spring onion greens 1 tblsp (to garnish) Salt as needed Soya sauce 1 tsp
Method :
- Wash and cook the basmati rice in 3/4 cup of water along with little salt and 1 tsp oil.
- Cook in pressure cooker for 3-4 whistles.
- Once done spread in a wide plate. Let the grains be separate.
- In a pan add oil and add the chopped garlic, slit chili and spring onion whites.
- Saute for 2 minutes and add the sugar.
- Sugar when caramalised gives a nice taste to the fried rice.
- You can discard the chili from the oil now and it may get too spicy, especially the Thai chilli we get here is very spicy.
- Once the garlic becomes slight golden color, add the capsicum and sweet corn. I used frozen corn. If using fresh one, cook this add.
- Saute in a medium high flame for 2-3 minutes.
- Ensure not to burnt it.
- Add salt and soya sauce to this.
- Mix well and add in the cooked rice.
- Gently mix it well without breaking the rice.
- Cook for 1-2 minutes.
- Switch off the flame and garnish with spring onion greens.
- You can enjoy the fried rice as it is or have it with Manchurian too.
- Instead of chilis, you can add 3/4 tsp of pepper powder in the last step along with rice.
- Always cook the basmati rice to separate grains for the sweet corn fried rice. The fried rice can be made using left over rice too.
