Making sprouts at home is very regular at my home. My mother-in-law used to make Sprouts at home and I learnt the easy method from her and following the same for the past 23 years now. I have shared many recipes using sprouts in Jeyashris kitchen.

Moong bean sprouts are very healthy and have a lot of health benefits. If you have fussy kids who don’t take sprouts in salads, this is the best way to add the Protein-rich moong sprouts. Both my children loved it very much and it is a perfect lunch box recipe.

  • In a pan add oil and add the spring onion whites and finely chopped garlic. I love more addition of garlic to fried rice, so added more.

  • Add a little salt to this.
  • Add the green chili, and sugar and saute them till the garlic turns nice golden color.

  • I used basmati rice, you can use any short-grained rice too.
  • Add the pepper powder and spring onion greens.

  • Mix well gently, check for salt.
  • If you want to add soya sauce add 1 tsp of soya sauce, while adding the green chili.

Notes:

  1. If you have cooked rice and moong sprouts at home, this Sprouts fried rice can be made in a jiffy.
  2. You can add finely chopped cabbage or frozen sweet corn while adding the sprouts.
  3. You can use cooked millets instead of cooked rice and make Millets Sprouts fried rice.

Sprouts fried rice recipe

Ingredients

  • ½ cup Sprouts
  • 2 cups cooked rice
  • 1 tbsp oil
  • 2 tbsp finely chopped garlic
  • 3 tbsp spring onion whites
  • 2 slit green chili
  • ¼ cup capsicum finely chopped
  • 2 tbsp Spring onion greens
  • Salt as needed
  • ½ tsp sugar
