Pudina pulao| mint pulao recipe, a quick and easy lunch box recipe, with full video and step by step instructions. Pudina pulao is a flavourful one-pot meal made using fresh mint leaves and basmati rice. I learnt this version from a friend long back. The recipe is updated with full video now. This pulao can be served as a weeknight dinner too. We can pair it with dal tadka or Paneer butter masala or simple onion raita .

  • Soak basmati rice in 2 cups water for 10 mins
Mint pulao 1 - 1
  • Grind ¼ cup mint leaves, ¼ cup coriander leaves, few curry leaves, and 2 green chilies into a fine paste.
Grind pudina leaves - 2
  • In a pressure cooker add ½ tbsp oil and 2 tsp ghee
  • Add 2 sliced onions and add a little salt.
  • Saute till the onions become soft.
Cook onions - 3
  • Add grind paste to the cooker.
  • Saute for a minute.
  • Add ¼ cup of green peas, if using.
  • Mix well and add salt.
  • Add 1 tsp of garam masala.
Easy pulao - 4
  • Add in the soaked rice along with the water.
  • Mix well.
  • Cover the cooker.
  • Pressure cook for 2 whistles.
  • Switch off.
  • Once the pressure subsides, open the cooker.
  • Gently mix the pulao, without mashing it.

Ingredients

  • 1 and ¼ cup Basmati rice
  • ¼ cup Mint leaves loosely packed
  • ¼ cups Coriander leaves loosely packed
  • Curry leaves few
  • 2 Green chili
  • 2 Onion
  • ¼ cup Green peas optional
  • 1 tsp Garam masala
  • ½ tblsp Oil
  • 2 tsp Ghee
  • Salt as needed

Instructions
