Vegetarian pasta salad recipe with a simple salad dressing using easily available ingredients. An easy summer pasta salad recipe and a very filling one too. Since we are adding chickpeas to this salad, it is a protein-rich salad. It is a perfectly balanced meal for people who are on diet.
You can use whole wheat pasta to make it healthier. We are adding cucumber, chickpeas, cherry tomato, and olives to this pasta salad.
You can add zucchini, blanched broccoli, blanched beans, and carrots too. I prefer to add more veggies and less pasta when I want to have a light meal. Also, you can pack this for the lunch box too. You can make it the previous night and pack it for the next day.

- Let’s make the dressing first.
- In a small bowl add the oregano, olive oil, chopped garlic, lemon juice, brown sugar(you can add jaggery too), pepper and chili flakes.

- Mix well.

- In a wide bowl add the cooked pasta ( I used fusilli, you can penne or macroni too), cucumber, cherry tomato, olives, cooked chickpeas, cubed capsicum and finely chopped red onion.
- Add salt.
- Now add the dressing to this.

- Mix well.
- Serve immediately.

- You can keep all the ingredients ready and just assemble them before you serve.

- Use any variety of pasta of your choice.
- Instead of pasta you can add cooked millet too.
- You can add cubed carrots to this pasta salad.

Ingredients
For the dressing
- 1 tsp dried oregano I used fresh ones
- 1 tbsp olive oil
- 1 tsp lemon juice
- 1 tsp chopped garlic
- 1 tsp freshly ground pepper
- 1 tsp brown sugar
- 1 tsp chili flakes optional
Other ingredients
- 1 cup cooked pasta
- ½ cup chopped cucumber
- ½ cup chopped cherry tomato
- ¼ cup olives
- ½ cup cooked chickpeas
- ¼ cup cubed capsicum
- 1 red onion
- Salt as needed
