Let it rest for 10 minutes, drain the water completely and pulse the paneer in mixie.  Scrambled paneer is ready.  In a pan add 4 tsp oil and add 1 tsp cumin seeds and 1 tsp ginger garlic paste. Saute till the raw smell goes, cook in low flame.  Add 2 chopped onions.  Saute till it becomes translucent. Add 1 finely chopped tomato. Add in the Capsicum. Add the scrambled paneer.  Mix well and cook for a minute, do no cook too much as it will make the paneer rubbery. Add crushed kasoori methi and mix well. Switch off the flame. Garnish with coriander leaves. Paneer bhurji can be served with chapati along with a dal, if needed. Notes 1. You can use fresh paneer for making paneer bhurji, in that case no need to put that in hot water. 2. For vegan version, replace paneer with tofu and make tofu bhurji.

- Add 1 finely chopped tomato.
- Add in the Capsicum.
- Add 1 tsp red chilli powder, 3/4 tsp coriander powder, salt and 1 tsp garam masala .
- Mix well and add 2-3 tblsp of water.
- Cook for 3- 4 minutes in low flame.
- Cook till the tomatoes becomes mushy.

- Add the scrambled paneer. 
- Mix well and cook for a minute, do no cook too much as it will make the paneer rubbery.

- Add crushed kasoori methi and mix well.
- Switch off the flame.
- Garnish with coriander leaves.

- You can use fresh paneer for making paneer bhurji, in that case no need to put that in hot water.
- For vegan version, replace paneer with tofu and make tofu bhurji.
