Okra pulao recipe| Vendakkai pulao – Easy to make pulao recipe with full video and step-by-step pictures.

School holidays are over and packing lunch with interesting lunch items is challenging for all mothers. And if you have 2 kids, it is even more complicated !! This bhendi rice | okra pulao is an interesting lunch box recipe I recently learned from my friend who visited here last month. I made little changes to the recipe to suit my kid’s taste, and the bhindi pulao is a super-hit recipe. As most kids love bhendi|Okra| vendakkai , this bhindi rice recipe will surely be a super hit lunch box recipe.

You can replace okra with boiled and cooked potatoes or add frozen green peas. If you have leftover rice you can make this quickly for a weeknight dinner too. If you are making a weekend lunch, you can make a dal fry and a dry sabzi like gajar matar or beans aloo stir fry, a raita and make a complete meal.

  • Wash and soak ½ cup of basmati rice in ¾ cup of water for 20 mins.
  • Cook ½ cup of basmati rice in ¾ cup of water in a pressure cooker for 3 whistles.
  • Once it is done spread on a plate and cool.

  • In a pan add 1 tbsp of oil and add add 1 thinly sliced onions.
  • Add a little salt and saute this till translucent.
  • Add 1 tsp of ginger garlic paste at this stage.
  • Cook till the raw smell goes off.

  • Now add a few cashew nuts and cook till it turns slightly golden brown.

  • Now add ½ tomato, mix well and cook for a minute.

  • Add 1-2 tsp sambar powder, ½ tsp turmeric powder and salt.
  • You can add an equal quantity of red chili powder and coriander powder instead of sambar powder.
  • Add chopped lady’s finger and cook on medium flame.

  • Once the vendakkai is cooked, add the cooked rice to this.

  • Gently mix well evenly.

  • Garnish with coriander leaves.

  • You can use raw rice or par boiled rice instead of basmati rice.

Ingredients

  • 8 vendakkai | ladies finger | okra
  • ½ cup Basmati rice un cooked
  • 1 onion
  • ½ tomato
  • 2 tsp sambar powder
  • 1 tsp ginger garlic paste
  • 1 tsp garam masala
  • 1 tbsp oil
  • Few cashew nuts optional
  • Salt as needed
  • Coriander leaves to garnish
