Nachos 2 cups Cheddar cheese 1/4 cup + 2 tblsp Olives 2-3 Cooked red kidney beans 2 tblsp Capsicum 2 tblsp (chopped) Sweet corn 2 tblsp Tomato 2 tblsp (chopped) Green chili or Jalapeno chili few Method:
- In a microwave safe bowl or plate arrange few tortilla chips.
- Sprinkle the olives, red kidney beans, capsicum, sweet corn and green chili or jalapeno.
- Sprinkle the cheddar cheese all over. If you don’t get cheddar cheese, add mozzarella cheese.
- Arrange one more layer of tortilla chips on this.
- Sprinkle the olives, red kidney beans, capsicum, sweet corn and green chili.
- Sprinkle a lavish layer of cheddar cheese.
- Microwave this for 2-3 minutes or till the cheese melts.
- Serve immediately.
- Adding the olives, capsicum, sweet corn is truly optional.
- The cheddar cheese which we find in Fair price shop here has some animal rennet, so i bought the non animal, vegetarian Cheddar cheese from Mustafa center.
