Preparation Time : 15 mins | Cooking Time : 15 Mins | Serves: 3
Basmati rice 1 cup Carrot 1 Green peas 1/4 cup Capsicum 3 tblsp (finely chopped) Onion 1 Cloves 3 Bay leaf 1 Cardamom 2 Ginger garlic paste 1 tsp Oil 1 tblsp + 3 tsp Ghee 1 tblsp Coriander leaves few Mint leaves few Red chili powder 1 and 1/4 tsp Coriander powder 1 tsp Cumin powder 1 tsp Garam masala 1 tsp Salt as needed
Method:
- Wash the basmati rice and soak it for 20 minutes in 1 and 1/4 cups of water.
- Chop the carrot into small cubes.
- In a pressure cooker, add ghee and 1 tblsp oil.
- Add bay leaf,cloves and cardamom.
- Add the ginger garlic paste. Saute for seconds.
- Add the sliced onions and saute till it turns translucent.
- Add few chopped mint leaves to this.
- Mix well.
- Add the carrot and green peas. I used frozen peas.
- Mix well.
- Add the red chili powder, coriander powder,cumin powder,salt and garam masala.
- Mix this well.
- Add the soaked rice to this. Add the soaked water to this too.
- Mix and cover the cooker.
- Pressure cook for one whistle and simmer it for 5 minutes.
- Meanwhile in 2 tsp of oil saute the finely chopped capsicum. I used red and green bell peppers.
- Let this be crisp.
- Open the cooker and add the capsicum and chopped coriander leaves.
- Mix this gently.
- Masala rice is ready.
- Serve with onion raita.

- You can add some chopped potato to the rice.
- Garam masala can be replaced by Biryani masala too.
