Mango salad recipe – Easy and healthy summer salad recipe
Mango salad recipe with step-by-step pictures, a healthy salad made using ripe mango and other healthy veggies, with a simple salad dressing. I always add raw mango to my salads, but I was excited to try a salad using ripe mangoes this time. We all loved it and my little one who is a bit choosy, when it comes to a new food, enjoyed it a lot and asked me for one more serving. The salad dressing balanced the sweetness of the mango. Method with step-by-step pictures :
- Choose just ripe mango. If it is overripe, you can cut them into firm pieces.
- Boil the sweet corn and take out the corn kernels. I used frozen corn.
- Chop the onions and capsicum into fine pieces.
- Let’s mix up the dressing. Mix all the ingredients given under the head “for heading”

- Balsamic vinegar gives a nice taste to the salad.
- You can add this salad dressing to any salad.
- Add the chopped mangoes, washed spinach leaves, onion, rajma, almonds, sweet corn, chopped capsicum, and coriander leaves in a wide bowl.
- Pour the dressing over it.

- Add salt.
- Mix well evenly.
- Mango salad is ready to serve.
- Serve immediately.

- You can replace rajma with chickpeas or any other legume of your choice.
- You can add walnuts, pumpkin seeds, and some flax seeds too.
- Always choose a just ripe mango for this mango salad.
- Raw mango can be used to make this salad.

Ingredients
- 1 big Ripe mango I used banganapally mango
- ¼ cup Cooked rajma
- 1 Onion
- ½ cup Sweet corn
- 1 tbsp Almonds
- 3 tbsp Capsicum
- ½ cup Baby spinach tightly packed
- Salt as needed
- Coriander leaves few
For the dressing
- 2 tbsp Olive oil
- 1 tbsp Pepper powder
- 1 tbsp Sugar or honey
- 1 tbsp Balsamic vinegar can replace with lemon juice
