Chia seeds 3 tblsp Milk 3/4 cup Mango pulp 1/4 cup Mango bits 2 tblsp for garnishing Vanilla essence 1/2 tsp Honey or sugar to taste (optional) Nuts for garnishing (optional)
Method:
- Soak the chia seeds in 3/4 cup of milk for 2 hours or overnight. I used raw milk, if using boiled milk, allow it to cool completely.
- Mix this up well without any lumps.
- Add vanilla essence to this and honey or sugar if adding.
- I didn’t add any sweetner as the mangoes were sweet.
- After 2 hours the chia sweets will be like jelly and the consistency will be like of a porridge.
- Puree half portion of the mango and add it to the milk chia pudding.
- Mix well.
- Transfer it to a serving glass or jar.
- Garnish with fresh mango bits and some nuts if you want. I added few pumpkin seeds.
- Serve chilled or immediately.
