Rice flour 1 cup Salt as needed Oil 1 tsp Water as needed Red chili powder 3 tsp Coconut Oil 1 tblsp Mustard seeds 1 tsp Urad dal 1 tsp Curry leaves few Asafoetida 2 pinches Coconut 2 tblsp
Method :
- In a wide bowl add the rice flour. I used store bought rice flour. You can use idiyappam flour or home made rice flour too.
- I wanted to try out the dough with store bought rice flour.
- It will take less water compared to the idiyappam flour.
- Add salt and 1 tsp oil to the flour.
- Boil the water into rolling boil.
- Add water little by little to the flour and mix well with a spoon.
- Cover this and keep.
- Once it is warm enough to handle, grease your hands with few drops of oil and knead the dough well.
- I just showed that we can make outer cover for modakam using this store bought rice flour.
- Add red chilli powder.
- Knead the dough again so that the chili powder will mix well.
- Make the dough into tiny balls.
- Steam it for 8 minutes.
- In a pan add the coconut oil. Add the mustard seeds, asafoetida and urad dal.
- Once the dal turns golden brown add the steamed ammini kozhukattais.
- Mix well.
- Add the coconut to this now.
- Mix well and switch off the flame.
- Kara ammini kozhukattais are ready to serve.
- Do not steam the ammini kozhukattais for a long time, else they will turn rubbery and hard.
- For a variation you can make plain ammini kozhukattais and season it with freshly ground pepper powder to make pepper ammini kozhukattais.
