Method  :

  • In a wide bowl add the rice flour. I used store bought rice flour. You can use idiyappam flour or home made rice flour too.
  • I wanted to try out the dough with store bought rice flour.
  • It will take less water compared to the idiyappam flour.
  • Add salt and 1 tsp oil to the flour.
  • Boil the water into rolling boil.
  • Add water little by little to the flour and mix well with a spoon.
  • Cover this and keep.
  • Once it is warm enough to handle, grease your hands with few drops of oil and knead the dough well.
  • I just showed that we can make outer cover for modakam using this store bought rice flour.
  • Add red chilli powder.
  • Knead the dough again so that the chili powder will mix well.
  • Make the dough into tiny balls.
  • Steam it for 8 minutes.
  • In a pan add the coconut oil. Add the mustard seeds, asafoetida and urad dal.
  • Once the dal turns golden brown add the steamed ammini kozhukattais.
  • Mix well.
  • Add the coconut to this now.
  • Mix well and switch off the flame.
  • Kara ammini kozhukattais are ready to serve.
  1. Do not steam the ammini kozhukattais for a long time, else they will turn rubbery and hard.
  2. For a variation you can make plain ammini kozhukattais and season it with freshly ground pepper powder to make pepper ammini kozhukattais.
