- Description : Congress Kadalekai, masala peanuts, a popular spicy tea time snack of Karnataka made using peanuts.
Roasted peanuts* 1/2 cup Oil 3/4 tblsp Red chili powder 1/2 tsp – 3/4 tsp Pepper powder 1/2 tsp Curry leaves few Salt as needed Turmeric powder 1/2 tsp Asafoetida a pinch Sugar 1/4 tsp *If using raw peanuts with skin, roast them first nicely for 10 minutes and then cool it and take out the skin. Then proceed with the recipe.
Method :
- In a pan add the oil. Add in the curry leaves.
- Roast in a medium flame till it becomes crisp and ensure it should not change its colour.
- Add in the asafoetida.
- Immediately add the roasted peanuts.
- Add the red chili powder, pepper powder, turmeric powder and salt.
- The one i tasted from the shop was too spicy but i made it to suit my family’s taste.
- Mix and roast this in a low flame for 2-3 minutes.
- Switch off the flame.
- Add 1/4 tsp of sugar. I tasted a tinge of sweetness in my Congress kadalai and so i wanted to recreate that taste. But still it was spicy only.
- This little sugar will balance the spiciness.
- Mix well.
- Allow this to cool completely.
- The peanuts will become very crisp after it cools down completely.
- Transfer this to a plate and mix this well with your hands.
- Break the curry leaves nicely and split the peanuts.
- Congress kadalai is ready.
- You can store this in an airtight container and consume this along with tea or coffee.
- This roasted masala peanuts goes well with curd rice or any South Indian meal too.
