Description : Coffee ice cream recipe, easy home made, no egg, 3 ingredient ice cream recipe using whipped cream, instant coffee powder and condensed milk.
Whipping cream 3/4 cup Condensed milk 1/4 cup Levista Instant coffee powder 2 tsp Hot Water 1 tblsp Corn flour 2 tsp Roasted walnuts 2 tblsp (optional)
Method :
- In a bowl | cup add the Levista Instant coffee powder.
- Add the hot water to this and mix well without lumps.
- You can lessen the quantity if you want a mild coffee flavour. I find this quantity perfect.
- In a bowl add the whipping cream. I used the jar.
- Add the corn flour to this. Adding corn flour gives a firm texture.
- Use the cream which has 35% fat content, this works best for ice cream.
- Using a electric beater whip the cream for 2-3 minutes until it forms a soft peak.
- Do not over beat.
- Transfer the whipped cream to a bowl.
- Add the condensed milk.
- Add the coffee mixture.
- Using a spatula fold everything well.
- Once everything is incorporated well, add the roasted walnuts.
- I just dry roasted the walnuts in a pan for 2 minutes.
- You can replace walnuts with chocolate chips too.
- I wanted to add the salted caramel chips, but it was not available in the store.
- Cover it and freeze for 8-10 hours or overnight.
- Scoop the ice cream and serve immediately.
- The sweetness was just perfect for me, if you want you can add 1-2 tblsp extra condensed milk.
- The coffee ice cream can be used for making coffee milk shake.
- You can add a tsp of cocoa powder in this mixture to get a nice mocha flavor.
- Adding walnuts or chocolate chips gives a nice crunch to the coffee walnut ice cream.
