Method:
- Cut the jack fruit and put them into a mixer jar. Add grated coconut, jaggery and cardamom powder to this.
- Grind this into a smooth paste.
- In a wide bowl add the rice flour. You can use home made rice flour or store bought flour or idiyappam flour too.
- Roast the coconut bits in ghee and add to this. (if adding)
- Add the baking soda (if adding) and salt.
- Add the ground jackfruit puree to this.
- Mix well. Add little water to bring it to a right consistency. It should not be too thick or too thin.
- If you are going to deep fry in oil, then keep the batter thick.
- I used the paniayaram pan for this.
- Add few drops of ghee to the pan.
- Scoop in the batter to this.
- Keep the flame medium low.
- Cover it with a lid.
- Once when it is cooked on one side, flip on to the other side.
- If you want add few more drops of ghee.
- Cover and cook for few minutes. Ensure not to get it burnt. Keep the flame medium and maintain the temperature throughout.
- Take it out from the pan. Serve hot.
- Repeat this for the rest of the batter.
- You can make chakkavarati and add this to the flour and make unniappam.
- Rice flour can be replaced by maida and deep fried.
- Instead of adding rice flour, you can soak raw rice for 2 hours and grind into a thick batter and continue with the remaining process.
