I learned this from my mom who is an expert in making avial. Aviyal is served with Adai, Coconut rice, and Puliyodarai. We make this compulsorily on festivals like kannu pongal and aadi perukku .

I have posted the recipe of Kerala style Avial too. Personally in our home, we add cooked peanuts or cooked chickpeas in avial . The crunchiness of it will enhance the taste.

We grind coconut, green chili, and cumin seeds into a fine paste for making aviyal. I add little soaked cashew nuts to this. This enhances the creaminess of the aviyal. Also if you want to make a vegan version of avial this gives the best taste.

Aviyal recipe

  • Soak the cashew nuts in hot water for 10 mins.
  • Grind the coconut, green chili, soaked cashew nuts, and cumin seeds into a fine paste.
  • You can add little water while grinding.
  • Keep aside.

  • Add 5 cups mixed veggies in a vessel.
  • I used white pumpkin, chow chow, drumstick, carrot, beans and raw banana.
  • You can use snake gourd, potato, peas and yam.
  • Add 2 cups of water to this and add required salt.
  • Mix well.

  • Cover and cook till the veggies are soft.

  • Now add the ground paste to this and mix well.
  • Let this boil for 2 minutes.
  • Add fresh curry leaves and 2 tbsp coconut oil.

  • Switch off and add 2 tbsp thick yogurt.
  • Mix well.

  1. Adding cashew nuts are optional, but it gives a nice creamy texture.
  2. You can add 1 tsp of rice flour while grinding the coconut mixture.
  3. You can add potato, brinjal, green peas, and arbi also in Aviyal.
  4. You can also add yogurt just before serving the aviyal.

Ingredients

  • 5 cups mixed veggies*
  • 1 cup Coconut
  • 1 tsp Cumin seeds
  • 4 Green chili
  • 10 Cashew nuts optional
  • 2 tbsp Coconut oil
  • Curry leaves few
  • 2 tbsp thick yogurt
  • 2 cups water to cook the veggies
  • Salt as needed
